Heather Ropes

When I was very little, my dad would wake me up after he got home from work around
midnight. We then had a Spook-a-roo. I would sit on top of the refrigerator in my happy place
and we would talk and have a snack. Sometimes just crackers and milk but some special nights
we would make a pie! Eating pie for breakfast was a treat that became a family norm.

Since I never cooked fruit pies with sugar, (Fruit is sweet, why would I?) I figured fruit or pumpkin pie was far more nutritious than cereal or donuts. My boys agreed.


After the wonderful ladies from Eustis, Nebraska expanded their venture, The Village Pie Maker’s rhubarb pie became Dad’s very favorite. I’d pack one or two in my cooler when I would drive out to Golden, Colorado to give my stepmother a caretaker break and have fun with Dad.

This was my first Father’s Day without him. I ate rhubarb pie for breakfast.
